
I think I was about 13 years old when I first tried Hotel Intercon’s Crepe Samurai. It was served at the Jeepney Café as one of the dessert buffet choices—layers of delicate crepes, sweet mangoes, and that mysterious “special sauce” that would take me years to figure out.
My eldest sister and I absolutely devoured those crepes. We loved them so much that one time, a waiter actually brought an entire serving container to our table. I still remember that.
I’m actually not sure why it was called Crepe Samurai. Maybe it was simply a playful name meant to make the dessert sound more memorable, or perhaps the “samurai” part was a nod to the Japanese association of layered crepe cakes. I’ve never found a definitive explanation, so the name remains a bit of a mystery to me—which somehow makes the dessert even more nostalgic.
Years later, as I got older, more restaurants and food bazaars started selling their own versions of Crepe Samurai, but nothing ever quite matched the one from Jeepney Café.
I tried recreating it several times over the years—giving up, then trying again. This was before food blogs were everywhere, before I went to culinary school, and of course, long before AI could help me troubleshoot a recipe. Every attempt brought me a little closer to the taste I remembered.
Then, in the summer of 2026, I tried again.
And this time, I think I finally got it.
